Our weekend guests are lovely! They are no longer vegetarians, which widens my culinary horizons, but I am sticking with the theme. The casserole I am planning now is a combination of eggplant, polenta and Portobello mushrooms. Add to that, a good tomato sauce, and you have guest-worthy fare.
