Bacon Brownie Cupcakes

Why are we so obsessed with bacon?  It seems as if the nation exploded with a new love for this salty strip of pork.  Now it is appearing in places where it wasn't welcomed previously like cookies, ice cream, and cakes.  There is even a food truck, Lardon, completely devoted to serving up all foods with a bit of bacon.  This recipe is a triple threat because it combines 3 of my favorite things: brownies, cupcakes, and of course bacon.  These cupcakes are fudgy.  The bacon in this recipe is in the dough, not crumbled on top but feel free to add frosting and bacon bits.

Bacon Brownie Cupcakes


4 oz unsweetened chocolate

1 ounce sweetened chocolate

8 tablespoons butter

½ cup sugar

¼ teaspoon salt

2 large eggs

1 cup AP Flour

2 tablespoons cocoa (not Dutch-processed)

4 strips bacon
