Crazy Good Blueberry Cobbler

Summer brings many edible delights, one of them being blueberries.  This sweet summer fruit can be used in countless recipes but one my favorites is an old stand-by, blueberry cobbler.  Tender biscuits are baked atop a potent blueberry compote that is best with fruit just picked from the bush.  Serve this delightful summertime dessert with whipped cream or vanilla ice cream.

Blueberry Cobbler

Ingredients:

3 tablespoons cornstarch
1 cup granulated sugar
6 cups picked over blueberries
2 tablespoons fresh lemon juice
1 cup all-purpose flour
1 cup firmly packed light brown sugar
1 teaspoon double-acting baking powder
1 teaspoon salt
1 teaspoon cinnamon
1 stick cold unsalted butter cut into bits (½ cup)
vanilla ice cream or whipped cream
