You don't need to be on an alkalizing diet to love this healthy soup recipe. It's full of green vegetables, flavorful fresh herbs, and aromatic spices that all contain numerous nutritional benefits. Healthy Alkalizing Green Soup
Adapted from a recipe in the Thrive Market 5-Day Detox
2 tablespoons olive oil
2 cloves garlic
1 3-inch piece fresh ginger, or 1/2 teaspoon powdered ginger
1 teaspoon ground coriander
1 teaspoon turmeric
1 large zucchini, sliced
About 3 cups vegetable or chicken stock
1 small head broccoli or 1 bunch broccolini, including trimmed stems
1 bunch kale, stems removed
1 large handful each of parsley and cilantro, stems are okay if you have a good blender
The zest and juice of one lemon
Salt and pepper to taste
In a large pot heat oil and sauté garlic and ginger until tender. Stir in coriander and turmeric and continue to sauté for another 30 seconds. This will nicely toast the spices.
Add 3 tablespoons water and add the sliced zucchini. Cook for about 1 minute, then add the stock. Simmer about 3 minutes.
Add remaining vegetables and lemon juice and continue to cook for 5 minutes, or until veggies are tender, but not mushy.
Remove from heat and transfer to a blender (in batches if necessary). Blend until smooth. Season with salt and pepper to taste.
Turmeric: Curcumin, the active ingredient in turmeric, has powerful anti-inflammatory effects and is a strong antioxidant.
Ginger: Ginger is part of the same plant family as turmeric and cardamom, so it also contains the same anti-inflammatory and antioxidant properties.
Cardamom: Helps our body eliminate waste through the kidneys, thus helping us detox and clarify. It also aids in digestion, among many other benefits.
Cilantro: The chemical compounds in cilantro help with the detoxification process by binding to toxic metals and loosing them from our tissues.
Parsley: Loaded with vitamins K and C. Parsley can also help neutralize certain types of carcinogens in our body.
