Clam fritters are made from clam meat, garlic, onion, bread crumbs, eggs, and various herbs and garnish. First, chop 2 dozen clams and combine them with 1 mashed clove of garlic, chopped parsley and celery, herbs, finely chopped onion and bread crumbs. The amount of bread crumbs should be enough to make the mixture slightly stiff. Beat 2 eggs and fold them into the mixed ingredients. If the mixture has become overly stiff (it should be spoonable), slowly add juice from the clams to loosen it up. Using a tablespoon, place scoops of the finished mixture in a frying pan filled shallowly with olive oil, turning the fritters as needed. Once they get a golden brown color, remove them from the pan, let them sit for a few moments on a paper towel, and serve.
