Field Peas

Ingredients

2 cups water
8 ounces fresh chicken or turkey necks
1 medium onion chopped
1 garlic clove minced
1 teaspoon parsley
1 pound fresh or frozen field peas
1/2 teaspoon salt
1/4 teaspoon red pepper flakes
Freshly-ground black pepper (optional), to taste

Preparation

In a large stockpot, boil the water. Add the chicken or turkey necks, onion, garlic, and parsley and boil for 15 minutes.

Add the field peas and cook until tender, about 30 minutes. Add the salt, pepper flakes, and pepper. Serve over steamed rice.
