Shrimp Fricassee

Ingredients

2 tablespoons Butter
2 tablespoons Flour
2 tablespoons Finely chooped tomatoes
2 tablespoons Chopped green peppers
teaspoon Garlic minced
teaspoon Salt
teaspoon Pepper
teaspoon Thyme
teaspoon Parsley flakes
teaspoon Celery salt
1 pound Shrimp cooked, peeled and
Deveined

Preparation

1) Preheat oven to 350. F

Melt butter in large frying pan. Add flour; cook constantly, until lightly browned.

Add tomatoes, green pepper, garlic, salt, thyme, parsley, bay leaf, celery salt, pepper, and salt; simmer 15 minutes.

Add shrimp to frying pan; simmer for 5 minutes.

Pack cooked rice into greased custard cups; bake for 5 minutes.

To serve, unmold rice unto serving platter. Pour shrimp mixture over rice molds.
