Recipe: Taco edit

Yield: Serves 6. Makes approximately 1/2 cup of seasoning mix.

teaspoons ground cumin

teaspoons dried oregano, crushed

teaspoon onion powder

teaspoon garlic powder

teaspoon salt

teaspoon cayenne pepper

tablespoons chili powder

--Filling

1

pound lean ground beef

1

piece onion, chopped fine

2

tablespoons canned green chiles, chopped

¼

cup Taco Seasoning Mix

--Fixin's

½

head shredded lettuce

4

piece plum tomatoes, seeded and chopped

1

piece green onions, finely chopped

1 ½

cups Cheddar cheese, grated

1

cup salsa

¼

cup sour cream

Step 1

To prepare the mix: combine the chili powder, flour, cumin, oregano, onion powder, garlic powder, salt and cayenne in a plastic zip-type bag; shake the bag until completely mixed.

Step 2

To prepare tacos from the mix: Brown 1 pound of lean ground beef with 1 finely chopped onion, 2 tablespoons chopped canned green chilies and a scant 1/4 cup of the seasoning mix. Cook until the meat is completely cooked, about 10 minutes. Drain off excess fat.

Step 3

Divide 1/2 head shredded lettuce among 6 taco shells. Fill with the meat mixture, 4 plum tomatoes that have been seeded and chopped, 1 green onion, finely chopped, 1 1/2 cups shredded cheddar cheese, 1 cup salsa and 1/4 cup sour cream.

Can double the meat and taco fixin's to use all the seasoning. A taco (tah-koh) is a traditional Mexican dish composed of a maize or wheat tortilla folded or rolled around a filling. The fact that a taco can be filled with practically any meat, fish, shellfish, vegetable, and cheese allows for great versatility and variety. A taco is generally eaten out of hand, without the aid of utensils, and is often accompanied by a garnish such as salsa and vegetables such as cilantro, onion, cabbage, tomato, or lettuce.
