Ginger Muffins

Ingredients

1/4 cup shortening
1/4 cup sugar
1 egg
1/2 cup molasses
1 1/2 cups sifted all-purpose flour
3/4 teaspoon soda
1/4 teaspoon salt
1/2 teaspoon ground cinnamon
1/2 teaspoon ground ginger
1/4 teaspoon ground cloves

Preparation

Cream together shortening and sugar Beat in egg Then molasses Sift together flour, soda, salt, cinnamon, ginger and cloves Stir into molasses mixture. Gradually add 1/2 cup hot water, beating until smooth. Fill greased muffin pans 2/3 full. Bake in moderate oven at 375 degrees for 20-25 minutes.

Makes 1 dozen. I always double this recipe.
