Baked Broccoli Frittata

Ingredients

1 teaspoon onions POWDER
1/2 cup CHOPPED TOMATOES
1 teaspoon garlic minced
2 tablespoons butter or margarine
1/2 teaspoon basil
1/2 teaspoon lemon pepper seasoning
1 cup broccoli, frozen cooked, drained
1 cup SWISS cheese shredded
1/4 cup PARMISAN CHEESE

Preparation

Heat oven to 425 . Generously butter a 2 quart shallow casserole or 4 individual baking dishes. In large skillet over medium-low heat, saute onions, red pepper and garlic in margarine until tender; cook slightly.

In large bowl, beat eggs, half and half and seasonings until combined.

Stir in onion-pepper mixture and broccoli. Pour into prepared casserole.

Sprinkle with cheeses. Bake at 425 for 15 to 25 minutes or until mixture is set (top will remaining moist). Let stand 5 minutes before serving.
