You may think this is an exageration, but really - this is the single best red sauce I have had outside of Italy, even then it's a close contender.
Best Ever Tomato Sauce - from Vine to Table
2 tablespoons extra-virgin olive oil
1/4 cup minced shallots or 1/2 cup chopped onions
2 cloves garlic, minced
5-6 pounds medium to large juicy tomatoes, any variety, cored, peeled and coarsely chopped
1 tablespoon minced fresh thyme
1 tablespoon minced fresh rosemary
2 bay leaves, fresh if possible
Kosher salt and pepper, to taste
Feel free to add capers, chopped olives, mushrooms, ground beef, ground chicken, etc.
