Spring Strawberry and Spinach Salad

This strawberry spinach salad is a light spring meal.  Sweet red strawberries are tossed with delicate baby spinach, red onions, and gorgonzola cheese.  A sweet and sour balsamic dressing melds all the different flavors in the salad into one delicious dish.  This salad would be great as a bed for grilled salmon or chicken or on its own with some crumbled bacon added.  Strawberry spinach salad will make you feel like a true gourmand in the kitchen.
 
 
Ingredients:
 
For the Dressing:
4 tablespoons balsamic vinegar
2 tablespoons red wine vinegar
1 tablespoon Dijon mustard
2 teaspoons light brown sugar
2 smalls garlic cloves, minced
2 teaspoons poppy seeds
 
1 package spinach leaves
1 pint strawberries, sliced
Optional:
bacon, cooked and crumbled
 
Mix the dressing ingredients together.In a small bowl, mix together the first 6 ingredients of the dressing. Slowly add the olive oil, while whisking vigorously to create an emulsion. Add salt & pepper, to taste.
 
Just before serving toss the spinach and strawberries with the dressing. Enjoy immediately. This salad will not keep.
