Seafood Fritters

Ingredients

1 pound sea scallops chopped
1 small green bell pepper chopped
1 small onion chopped
1 jalapeno pepper finely chopped
cup complete pancake mix
1 teaspoon salt
teaspoon freshly-ground black pepper
2 tablespoons water

Preparation

In a large bowl, combine all the ingredients except the oil; mix well.

In a medium saucepan, heat the oil over medium heat until hot but not smoking. Drop teaspoonfuls of batter into the oil and fry for 3 to 4 minutes or until golden on all sides.

Drain on a paper towel-lined platter and keep warm in a warm oven. Repeat with remaining batter.
