Instructions
Step 1
Combine the first 7 ingredients (shortening, semisweet chocolate morsels, vanilla extract, crunchy peanut butter, powdered sugar, butter or margarine, and peanuts or pecans), stirring well. Shape the mixture into 1-inch balls.
Step 2
For the standard method: Combine chocolate morsels and shortening in the top of a double boiler. Bring water to a boil, then reduce heat to low and cook until the chocolate melts. Dip each peanut butter ball into the chocolate mixture. Place on wax paper to cool. Store in the refrigerator.
Step 3
For the microwave method: Combine chocolate morsels and shortening in a 1-1/2-quart bowl. Microwave at MEDIUM (50% power) for 5 to 6 minutes or until chocolate is softened; stir well. Dip each peanut butter ball into the chocolate mixture. Place on wax paper to cool. Store in the refrigerator.
Step 4
Peanut Butter Chocolate Balls may be frozen in an airtight container for later use. Remove balls from freezer 1 hour before serving.
