Greek Chicken Breasts

Ingredients

1 tablespoon dried oregano
4 chicken breast halves, skinless and boneless
3 tablespoons olive oil
cup dry white wine
2 ripe tomatoes -- peeled and chopped
3 tablespoons olives -- sliced
2 tablespoons capers
2 tablespoons crumbled Feta cheese

Preparation

Combine flour and oregano in a shallow dish; dredge chicken breasts in flour mixture. Heat olive oil in a large skillet over medium heat; add chicken breasts, and cook 10 minutes, turning once. Add wine and broth (if wine is not desired, double amount of chicken broth or substitute apple juice); simmer 10 to 15 minutes. Add chopped tomato, olives, and capers; cook until thoroughly heated. Spoon into serving dish; sprinkle with Feta cheese.
