Cantonese Beef

Ingredients

500 grams beef, fillet
2 tablespoons cornflour
tablespoon sugar (caster)
2 teaspoons sherry
1 tablespoon tomato sauce
1 teaspoon vinegar, white
1 teaspoon sugar (caster)
2 tablespoons chicken stock
2 teaspoons vegetable oil

Preparation

Slice eye fillet into 6 pieces. Flatten steak to about 1 cm thickness. Mix marinade ingredients with steak and egg thoroughly. Let stand for 30 minutes.

Heat oil for frying. Cook each piece of fillet over medium heat for 3 minutes. Remove and drain. Place on serving plate.

Pour sauce ingredients into preheated pan with 2 teaspoons of oil. Bring mixture to boil. Pour sauce over steak and garnish with sliced tomatoes.
