Sweet Sticky Toffee Pudding

Satisfy your sweet tooth this weekend by making some sticky toffee pudding.  This dessert combines a moist sponge cake consisting of sugary dates with vanilla custard and toffee sauce, my mouth is watering just writing about it.  Sticky toffee pudding descends from Britain and eventhough British food has a poor reputation, I assure you this dessert will please the palate. 

Sticky Toffee Pudding


For the Cake:

8 ounces pitted dates, finely chopped

2 teaspoons baking powder

½ cup boiling water

1 ½ cups all-purpose flour

½ teaspoon salt

8 tablespoons (1 stick) butter, room temperature

1 cup sugar

2 eggs

1 tablespoon dark corn syrup

1 teaspoon vanilla extract

For the Toffee Sauce:

2 sticks butter

1 cup light brown sugar, packed

1 tablespoon dark corn syrup

1 cup heavy cream

¼ teaspoon salt
