Must-Make Frosted Banana Pecan Bars

Banana and pecan are a natural flavor combination and are simply delicious together in these banana pecan bars.  The addition of smashed bananas to the batter ensure that these bars are moist and have a strong and true banana flavor.  Each bar is topped with cream cheese frosting and a whole pecan.  

Banana Pecan Bars

Ingredients:

Bars:
1/2 cup butter
2 cups sugar
3 large eggs
1 1/2 cups mashed banana
3 teaspoons banana rum (or regular rum with banana extract if not available)
2 cups flour
1 teaspoon baking soda
pinch of salt
Whole pecans

Frosting:
1/2 cup butter
1 (8 oz) package cream cheese
4 cups confectioner's sugar
2 tsps banana extract (or banana rum or regular rum)

Directions:

Cream sugar and butter together, beating around 3 to 4 minutes. Beat in eggs and banana's along with rum. Mix well. Pour in to a 15x10 inch x 1 inch baking pan. Bake at 350 degrees till brown and set around 25 minutes. Test for doneness with tooth pick. cool completely.

Cream frosting ingredients together till smooth in mixing bowl. Spread over cooled bars. Top with whole pecans.
