
Creme Brulee is a classic French dessert. Nothing beats the sound of the first cracking of the caramelized top into the smooth custard below. I love the traditional vanilla flavored creme brulee but there is something about the summer and all that fruit that makes me want to mix the two. The key to making perfect creme brulee is to cook the custard over low heat so your eggs do not scramble. I like to pour the mixture through a fine mesh sieve before separating it into ramekins as an extra precaution.
Orange Creme Brulee
The addition of the orange flavored liquor makes this version extra special.

Blackberries provide a nice tart balance to the creaminess of the custard.
