"Every kitchen ritual has a scientific justification behind it and when the chef has a reasonable understanding of it, then they can comprehend as to, why do certain procedures work or inevitably fail and thus can help in finding a solution to the problem. I want to absorb as much information as possible and impart it to my fellow professionals, for the advancement of cooking. The discovery and development of food technologies and products should not be feared; we should embrace ‘New Cooking’ and educate the chefs of tomorrow, and ourselves, in these areas. Education is the key to development for the future."
