Mom's Mercer Island Apple Crisp

Ingredients

Filling:
cup white sugar
1 Pinch of salt
2 tablespoons corn starch
1/4 teaspoon cinnamon
1/8 teaspoon nutmeg
1 tablespoon lemon juice
Topping:
1 cup flour
1/2 cup brown sugar
1 cube of butter

Preparation

Peel and core apples then slice apples into thin slices.

Mix apples in mixing bowl with white and brown sugar, salt, corn starch, cinnamon.

Stir until apples are coated.

Add lemon juice and stir.

Add contents to 7in x 11in pyrex container.

Blend topping mix ingredients at room temperature (final result will be chunky)

Spread topping mixture evenly over top of filling.

Bake at 400 degrees for 10 minutes, then bake at 350 degrees for 1 hour.

Remove from oven and cool to taste.

Add one dollop whipping cream or one scoop home-churned vanilla ice cream per serving.

Garnish with sprig of mint.
