Sloppy Sloppy Joe


1 1/4 pounds ground chunk/beef
1/2 cup onion, chopped
1 (15 oz.) can tomato sauce
1/2 cup water, more if needed
Salt and pepper to taste
8 hard rolls or Kaiser rolls, split, lightly toasted and buttered
Shredded iceberg lettuce; optional


In large iron skillet on medium-high heat, cook ground beef along with onion until meat is browned, about 10 minutes. Stir frequently to break meat up into small clumps. Spoon off excess fat. Add tomato sauce and 1/2 cup water. Reduce heat to medium-low and simmer uncovered for 10 minutes, stirring occasionally.
Stir in sloppy joe mix. Simmer about 5 more minutes, stirring often, until mixture is thick but spoonable. Thin with a little additional water if it is too thick - simmer to reduce it a little more if too thin. Salt and pepper to taste. Spoon some of the mixture over bottom half of each roll. Top with optional lettuce and cover with top half and pick up to eat. Makes 4-8 servings.
Topped with shredded lettuce, this is a quick and nourishing meal in itself. Pickles, corn on the cob are tasty accompaniments. Also chips.
