Delicious Gingerbread Cake With Orange Glaze
My husband is very simple and plain when cakes are in question, so I had to split this cake in half. The plain half is all his to enjoy, while me and the kids are enjoying the glazed half. Originaly, the glaze covers only the top of the cake, but as I had pleantly of glaze on hand, I just opened the cake and filled it with some glaze too.

- 2 eggs eggs
- 3 deciliters sugar
- 3 deciliters all-purpose flour
- 1/2 teaspoon baking soda
- 1/2 tablespoon cinnamon
- 1/2 teaspoon ginger
- 1.5 deciliter sour cream
- 50 gram butter or margarine
- 75 gram butter or margarine (for glaze)
- 1 tablespoon freshly squeezed orange juice
- 1 rind grated orange rind
- 3.5 deciliters powdered sugar
- slices thin orange slices(optional)
Instructions
Step 1
Preheat oven to 350°F.
Step 2
Beat eggs and sugar until white and fluffy. Using a wooden spoon, add flour mixed with baking soda, cinnamon, and ginger. Mix in sour cream and lastly the cooled melted butter.
Step 3
Pour batter into a greased and floured baking pan (20 x 30 cm).
Step 4
Bake on the middle rack of the oven.
Step 5
Turn the cake onto a cooling rack and let it cool down.
Step 6
With an electric mixer, whisk together all the ingredients for the glaze until it is shiny and smooth. Spread the glaze over the cake. Cut the cake into pieces and garnish each piece with a thin orange slice.
